Stuffed Potato Waffles

Finally making this recipe that I’ve had floating in my head for a few days has inspired me to order a waffle iron that’s not so…. mini LOL

What you need:

  • Waffle Iron

  • Shredded potatoes (freshly grated or thaw out some frozen)

  • Whatever you want to stuff them with.

  • I used deli ham and shredded cheese.

Grating your peeled potato’s into cold water will help keep them from turning brown right away.

Cover the bottom of the iron with a layer of hash browns. This is probably about 1/4 cup or less for mine.

Using a dirty old pot holder, squish down the waffle iron closed. I hope you turned your waffle iron on and it’s hot. Should have mentioned that.

After 3 minutes check and see how it looks. I like to take a spatula and push all the potato hanging out towards the inside, then close it another minute.

If you use a metal fork or utensil to remove your waffles, I WILL disown you 🙃

I served mine with a can of cocktail fruit.

My two year old demanded I take a picture of his plate too. He scooped his own fruit onto his plate. He was very excited about that 🥰
